Potatoes – I use and recommend using Russet potatoes. They have a nice crispy exterior and fluffy interior when cooked and are so delicious! Olive oil – the olive oil helps the potatoes have that signature crispy exterior while keeping the potato wedges from sticking to the air fryer basket as they cook. Seasoning – I love to use my Stone House Seasoning which is my go-to house seasoning for so many recipes. If you don’t already have a batch of it made, for each teaspoon of seasoning you’ll need: 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper, and 1/4 teaspoon granulated garlic. You can also use other favorite seasonings listed below under Recipe Variations.

Cajun Potato Wedges – use Cajun Seasoning to taste. Ranch Potato Wedges – use Ranch Seasoning to taste. Parmesan Potato Wedges – add 2 tablespoons of freshly grated Parmesan cheese to the potato wedges when removed from the air fryer. Tex Mex Potato Wedges – add Taco Seasoning to taste.
Storage Tips
To store. Store leftover potato wedges in an airtight container in the refrigerator for up 3 days. Reheat heat them in an air fryer or on a baking sheet in a 400º F oven until heated throughout and crispy, about 10 minutes. To make ahead. Prepare the potato wedges and store in the refrigerator following the directions under To store. Reheat and serve. To freeze. Cook and cool completely.
