The combination of tangy blue cheese with savory bacon has me ready to dig in! It is right up there with pimento cheese, a bacon ranch cheese ball, and queso as my favorite cheese appetizers.

Cream cheese – you’ll need softened cream cheese for this recipe. Half-and-half – you can also substitute with heavy cream or whole milk. Blue cheese – you can also substitute with gorgonzola or even feta if you prefer. Bacon – cooked and crumbled is delicious and hearty in this recipe. Chives – I like to mix chopped fresh chives into the dip and sprinkle them on top once it has baked. You can substitute with dried chives or even finely sliced green onions. For serving: Crackers and fruit
Step-by-Step Instructions
Whip cream cheese, half and half, and blue cheese together until light and fluffy. Stir in the crispy crumbled bacon and the chives and then spread the dip in a 10-inch skillet and bake until golden brown. Once it has been baked, sprinkle it with more chives and serve it with crackers and fruit.
It makes such an easy and delicious appetizer. It is perfect for serving during the holidays, watching football games, to just enjoying a quiet weekend at home with your family!
Storage Tips
To make ahead (unbaked). Prepare as directed and spread into a baking dish or pie plate without baking. Cover tightly and store in the refrigerator for up to 3 days. Alternately, store the mixture in an airtight container and then transfer it to a skillet for baking. When ready to serve, remove from the refrigerator and bake. You may need to add a few more minutes to the baking time. To make ahead (baked). Prepare as directed. Allow to cool. Cover tightly and store in the refrigerator for up to 3 days. To freeze.
