Especially if there is a meaty appetizer in the bunch, then you better believe this Bleu Cheese Dip is part of the plan! I originally thought I’d just include the recipe for it along with the Buffalo Chicken Potstickers that I posted yesterday, but then, I knew I’d forget what recipe I included it in and tell someone the wrong thing when they asked and there I’d be, looking like an idiot when I gave them the wrong recipe for something that I make all. the. time. So, I thought it deserved its very own little spot. It is just too good to get lost in the mix of other recipes. When you are making this bleu cheese dip, or blue cheese dip if you prefer to spell it that way, use a bleu cheese that you’d like to eat. If you only like Maytag Bleu Cheese, then by all means, that’s what this dip calls for. If you prefer a gorgonzola, then use it instead. The cheese is totally your call in this recipe.
