I can depend on it to the point that usually before I even ask him, I know exactly what kind of chicken salad I can make for him. Sometimes, I serve him his favorite chicken salad with grapes and that makes our entire meal and then sometimes, I decide that we need just a little something extra. That’s when I turn to this recipe for chicken salad stuffed tomatoes that is out of this world delicious! I make the chicken salad with almond slivers, celery, onion, and celery salt as the main flavors. Then, I core a medium tomato and stuff it as full as possible, to the point of it spilling over. The tomato adds so much to the chicken salad and the flavors just pare perfectly together. The great thing about this recipe is that you can easily make it ahead and store in the refrigerator ready for serving when you host a luncheon or shower, or even make them smaller for hand-held appetizers in petit tomatoes for a party.
