Well, I wanted to share this absolutely delicious way that I turned those chocolate sugar cookies into these chocolate marshmallow sandwich cookies! Yum! They are perfect for parties, get togethers and definitely wonderful for tailgating, football games, and Halloween. Well, in all reality, I can’t think of a holiday or happening that they wouldn’t be perfect! I bake my chocolate sugar cookies according to that recipe’s instructions. While the cookies cool, I cut my marshmallows in half and set them aside until the cookies are ready for them. Then, flip each of the cooled cookies over and place one of the halved marshmallows onto the cookie. Then, pop the sheet pan back into the oven and under the broiler until the marshmallows begin to melt and get a light toasty brown. Then, remove them from the oven and let them cool for just a second or so. Top each of the marshmallow topped cookies with another chocolate sugar cookie and lightly press down on the top cookie. Let the sandwich cookies remain on the baking sheet to cool and then transfer to a platter for serving. Yum, Yum! Here’s my Chocolate Marshmallow Sandwich Cookie Recipe.
