How to Make Curry Cashews

Step #1: Preheat your oven to 400 degrees Fahrenheit (204 degrees Celsius). Did you know that cashews are low in sugar and rich in fiber, heart-healthy fats, and plant protein? They’re also a good source of copper, magnesium, and manganese, nutrients important for energy production, brain health, immunity, and bone health. Step #2: Place cashews on a large baking sheet and arrange them in a single layer. Roast for 7 to 9 minutes, until slightly golden brown. Step #3: Meanwhile, melt the coconut oil in a small saucepan over medium-low heat. Once melted, turn off the heat and stir in the spices. Step #4: Place the roasted cashews in a large bowl. Pour the spiced coconut oil over the cashews and toss well to coat. Serve warm or at room temperature. To reheat, simply spread them on a baking sheet and warm them in a preheated oven at 350 degrees Fahrenheit (175 degrees Celsius) for about 5 minutes, or until they’re heated through and crispy.
