No added sugar, no additional fruits, just the bright fresh taste of the ripest pineapple you could ever imagine. Here’s how it came to be. I always look forward to my monthly box of fresh fruits from Harry & David. I’ve subscribed to their monthly service for some time now and always love that they send fruit at it’s peak. Well, this month’s delivery was fresh pineapple and as soon as I opened the box I was met with the heady aroma of the pineapple. I thought of dozens of ways to use it, but then decided on this simple sorbet recipe. To make it, I decided to broil the pineapple for just a few minutes to help the pineapple release even more of it’s sweetness and flavor. I peeled the pineapple and then cut it into large chunks for even broiling. Once it was broiled, I transferred the pineapple into my blender, poured in the juices that had released during broiling, and then pureed the pineapple until smooth. So that I didn’t have to add any ice to my pineapple sorbet for fear of it diluting the delicious pineapple flavor, I then poured the pineapple puree into my ice cream maker. One flip of the switch and a few minutes later, I had this amazing, delicious and perfect pineapple sorbet. I do believe it will be happening in my house all summer long!
