How to Make Garlic Soy Sauce Chicken
Step #1: In a large bowl, combine the soda, soy sauce, fish sauce, garlic powder, coriander, and chili powder. I completely lost my mind and decided to marinate some chicken thighs in a mixture of soy sauce, fish sauce, spices, and an entire 12 oz. bottle of mango soda. I figured that it would either be awesome or disgusting, and I was willing to take that chance. As I’m posting this recipe now, you’ve probably already figured out that it was awesome. It is definitely going on the regular rotation at our house! Step #2: Add the chicken thighs and toss to coat. Make sure each piece of chicken is submerged, cover the bowl with plastic wrap, and refrigerate overnight. Step #3: Remove the chicken from the fridge at least 30 minutes prior to cooking. Step #4: Preheat your grill to medium-high heat (I set mine to 375°F/190°C). When hot, place your chicken thighs on the grill and close the lid. Step #5: Let them cook for 8-10 minutes or until cooked through, turning once. Step #6: Remove from the grill and let rest for 3-5 minutes. Serve with rice tossed with cilantro lime and/or marinated onions. To reheat, thaw if frozen, and then warm in a preheated oven at 350°F (175°C) for 15-20 minutes, or until heated through. Alternatively, you can microwave on medium power in short bursts, checking frequently to avoid overcooking.
