This Greek roasted red pepper dip is another one of those recipes I learned in our Athens cooking class. We really had so much fun taking that class! This spicy feta dip recipe was the last one we learned, and it truly only took us five minutes to make it! Flavor Explosion: The feta cheese brings this amazing creaminess to the table, while the roasted red peppers add a sweet and smoky dimension. Add in a dash of red pepper flakes, and you’ve got a delightful kick of heat that makes the dip incredibly addictive. Versatile Snacking: This dip is a hit at parties, but it’s also fantastic for a night in. You can pair it with a variety of dippers, from crunchy veggies to warm, fluffy pita bread. It’s versatile and pairs well with pretty much anything. Crowd-Pleaser: Every time I serve this dip, it’s guaranteed to be a hit. People just can’t seem to get enough of it, and I’m always asked for the recipe. It’s a great feeling when something so simple brings so much joy. Consistent Winner: Having made this dip countless times, I can vouch for its consistency. It comes out perfect every single time, which is a huge win in my book. It’s one of those reliable recipes that you can fall back on time and time again, knowing it won’t let you down. Roasted Red Peppers: These roasted peppers bring a lovely sweetness and a touch of smokiness to this roasted red pepper feta dip. They balance out the tanginess of the feta cheese beautifully, creating a harmonious blend of flavors. Red Pepper Flakes: These add a subtle heat to the dip, giving it an exciting kick that makes the flavors pop even more. It’s just enough to add some warmth without overpowering the other ingredients. Garlic Kick: If you’re a garlic lover like me, adding a clove of garlic to the food processor when you’re blending everything together can give the dip a nice, zesty kick. Spice It Up: For those who love their dips with an extra bit of heat, feel free to increase the amount of red pepper flakes, or even add a fresh chili or a splash of hot sauce. Lemon Zest: A bit of lemon zest or a squeeze of fresh lemon juice can add a bright, citrusy note that really lifts up the flavors and brings a touch of freshness. Kalamata Olives: These dark, rich olives whole or halved add a bold and beautiful garnish. Step #2: Add the roasted red peppers, salt, and red pepper flakes then pulse the processor a few times. While continuing to pulse, drizzle in the olive oil. Depending on the feta used, you may want to add a bit more olive oil until it reaches a spreadable consistency. I used my handy small-size food processor, which was perfect for this quick job and doesn’t take up a ton of space in my dishwasher. Step #3: Serve with vegetables like red bell peppers, cucumbers, carrot sticks, celery sticks and warm pita bread, pita chips, crackers or even tortilla chips for dipping. Drain the Peppers: If you’re using roasted red peppers from a jar, make sure to drain them well before adding to the food processor. You don’t want any extra liquid making the dip too runny. Pulse, Don’t Blend: When you’re in the food processor, make sure to pulse instead of blending continuously. This helps you to better control the texture, ensuring the dip stays nice and thick. Adjust to Your Taste: Don’t be afraid to tweak the quantities to suit your taste. Love it spicier? Add more red pepper flakes. Want it creamier? A splash more olive oil will do the trick. Serve at Room Temperature: This dip tastes best when it’s not too cold. If you’ve stored it in the fridge, let it sit out for a bit before serving.
