I love that I can make this meal with ground beef, pantry staples, and other ingredients I generally keep on hand. Served with creamy mashed potatoes or tender rice and green beans, it is a meal everyone loves.

How to Make Hamburger Steak

Ground beef – I like to use ground chuck that is 80% lean for this recipe. It makes for the most juicy, tender, and flavorful results! You’ll need 1/4 pound of ground beef for each hamburger steak that you plan to serve. While this recipe is written for four servings, I often like to double it for larger gatherings or to have leftovers to enjoy during the week. You can also use ground turkey or ground chicken for this recipe. For leaner meat, such as ground chicken or turkey, you may need to add a little olive oil. Bread crumbs – You can use plain or seasoned bread crumbs based on your personal preference or an equal amount of crushed cracker crumbs. Egg – optional. If I am making for four servings, I generally omit the egg. If I’m doubling or tripling the recipe, I sometimes include an egg as an additional binder to the hamburger steak. However, it is still optional. Worcestershire sauce – adds a rich flavor to the beef. You can also use coconut aminos if you are sensitive to soy. Stone House Seasoning – my favorite house blend of garlic, salt, and pepper.
For the Homemade Onion Mushroom Gravy
Onion – Sliced onions add so much flavor to this hamburger steak. I prefer to use a sweet onion such as Vidalia or a Spanish onion. Mushrooms – You’ll want to use sliced onions that have been cleaned with a paper towel to remove any dirt or debris. Beef stock – You can also use beef broth. Flour – A little flour is used to thicken the gravy for the hamburger steak.
Step-by-Step Instructions
Make the hamburger steak mixture. Add the ground beef, bread crumbs, egg (if using), Worcestershire sauce (or coconut aminos), and Stone House Seasoning to a mixing bowl. Use clean hands and combine the mixture until just combined. Form into 1/4-pound balls and place onto a parchment-lined baking sheet as you continue to make the rest. Press into hamburger patties. Refrigerate if not ready to cook immediately. Cook the hamburger steak. Place a skillet over medium-high heat. Add the beef patties to the skillet. Cook the patties for 4 minutes on one side and flip to the other side. Cook until they reach an internal temperature of 160º F when checked with an instant-read digital thermometer. Make in batches if needed. Remove from the skillet to rest. Make the onion mushroom gravy. Add the onions and mushrooms to the skillet. Cook until tender, about 3 minutes. Mix together the flour and beef stock and pour into the skillet with the mushrooms and onions. Stirring constantly, cook until the onion mushroom gravy has reduced and thickened. Serve. Top with the onion mushroom gravy and serve.
Recipe Variations
Gluten-Free Hamburger Steak – use gluten-free bread crumbs in the meat mixture and gluten-free flour in the gravy. Egg-Free Hamburger Steak – omit the egg from the recipe. Grilled Hamburger Steak with Swiss Cheese and Mushroom Gravy – Heat the grill or grill pan to medium-high heat. Add the hamburger patties and cook for 3 minutes on the first side. Flip and cook until the hamburger patties reach the desired temperature (recommended at least 160º F.). Add the slice of Swiss cheese and remove from the grill. Meanwhile, make the mushroom gravy according to the directions in this recipe. Top with the mushroom gravy and serve. (See my hamburger recipe for more details on how to grill the hamburger patties if needed.) Hamburger Steak without Onion or Mushrooms – omit the onions and/ or mushrooms from the gravy. Hamburger Steak with Southern Gravy – you can also top it with my homemade Southern Gravy. It is delicious and so easy! Hamburger Steak without Gravy – you can also omit the gravy entirely. It is delicious served with BBQ sauce, Steak Sauce, or ketchup!
Storage Tips
To store. Place in an airtight container and store in the refrigerator for up to 4 days. Reheat in the oven or in the microwave in 20-second intervals until heated throughout to 160º F.
Leave a little room – don’t crowd your skillet as you cook your hamburger steak. I even like to use two skillets if making a double batch. Let them rest – let the cooked hamburger steak rest while you make your gravy so the juices redistribute before serving. Double up – go ahead and double the recipe to use for meal prep during the week or freeze half (cooked or not) for later!
To make ahead. Cook as directed and store in the refrigerator for up to 4 days. Reheat as directed in storage directions and serve. This is great to make them ahead as meal prep for a weeknight dinner or when entertaining. To freeze. Store in an airtight, freezer-safe container for up to 3 months. Thaw in the refrigerator overnight and reheat (if cooked) to an internal temperature of 160º F and cook (if not) as directed in the recipe.
