And I am so excited about sharing this fun way to make them with you! These Loaded Potato Skin Bites! I love that each one is just a bite (or maybe two if you want to be conservative) and that they are easy as can be to throw together for a party or get together. And you know, they are just perfect for watching all of the college football games this weekend! To make them, I start with Russet potatoes that I’ve scrubbed clean and then slice rather thinly, but still thick enough to hold up to any toppings that I might add. I arrange the slices on a parchment lined baking sheet and then drizzle on olive oil and sprinkle with salt. I use a good bit of salt since potatoes can be a bit bland. The salt just helps to flavor them as much as possible. Then, I sprinkle on freshly ground black pepper and bake them until they are fork tender in the center, about 20 minutes. Then, I turn the oven to broil and top each slice with a bit of shredded cheese and pop them back under the broiler for the cheese to melt, about 3 minutes or so. And then, I finish them up by topping them with whatever my little heart desires! Sour cream, chopped green onions, crispy bacon pieces, you name it. The skies the limit.
