on May 16, 2016, Updated Aug 30, 2021 7 Comments I love fruit salsa recipes! I think they are perfect pared with grilled fish or chicken, but have to admit that I also love just digging into a bowl of it with a chip on occasion! I had fresh mangoes that were just perfectly ripe and begging to be used and I immediately knew I wanted to make this Mango Blueberry Salsa. To make my Mango Blueberry Salsa, I just used six ingredients. One really ripe mango that I diced, a red pepper, jalapenos, spring onions, fresh cilantro and lime. Of course there are also blueberries, which I failed to included in my photo above since they didn’t require any time of the cutting board! 🙂 It really comes together quickly once you have all of your fruits and vegetables diced and ready to go. One of my favorite things to do in the kitchen is to dice or chop fruits and vegetables. There is just something therapeutic about the rhythm of it that I especially enjoy. I’m not sure what that says about me and most likely don’t want to know! LOL! Once you dice your mango, peppers, and onions, you toss them into a medium bowl. Then goes in your blueberries, chopped cilantro, and your fresh lime juice. If you like, you can also add a pinch of salt to the mixture, give it a good stir and then pour it into a bowl for serving. Although I definitely prefer this salsa freshly made, you can make it just a little bit ahead of time if you need to do so. Just be sure to wrap the bowl well with plastic wrap and store in the refrigerator for up to a couple of hours. Here’s my Mango Blueberry Salsa Recipe. I hope you enjoy it as much as we do! Enjoy!
