Growing up, I could always depend on my grandmother having a big bowl of pimento cheese that would be quickly devoured at reunions, showers and church get togethers. Then, when I married, it was actually a relief to learn that my mother-in-law was famous for doing the same thing! So, naturally, I knew that baked chicken would be spectacular topped with a bit of pimento cheese. It keeps the chicken moist and from drying out and gives it a ton of flavor. Thankfully, my family loves it as much as I thought they would and it is now one of those chicken recipes that they request again and again. If you’d like, you can chop the chicken to make it into bite-sized pieces and make this more of a casserole type meal. We love it as individual pieces of chicken, but either way would work perfectly.
