on Apr 28, 2014, Updated Nov 23, 2021 4 Comments In my family, pancakes make one of our favorite recipes for breakfast, brunch or even breakfast for supper and these roasted strawberries pancakes are at the top of our list when fresh strawberries are in season. Roasting the strawberries takes just a few minutes, but adds so much flavor to this pancake recipe! Since it removes some of the moisture from the strawberries, your pancakes will still hold together beautifully! You’ll have gorgeous, light and fluffy pancakes studded with nice bites of roasted strawberries throughout. Every bite will give you that nice burst of delicious roasted strawberry flavor! I use my buttermilk pancake recipe as the base recipe for these pancakes and then stir in pieces of the roasted strawberries into the pancake batter. You’ll cook the pancakes as you would any other pancake recipe, but watch carefully so that the exposed strawberries do not overcook. They smell heavenly as they are cooking and I am always standing watchful like a mother hen because I can’t wait to dig into them! I love using maple syrup on these pancakes, but strawberry syrup is also delicious and takes the strawberry flavor completely over the top! Here’s my Roasted Strawberry Pancakes recipe.
