on Apr 06, 2016, Updated Oct 05, 2021 13 Comments One of my favorite breakfasts has always been oatmeal and recently, I’ve been making a whole lot of overnight oats. I’ve previously shared my recipe for my maple berry overnight oats, but thought you might want to try my strawberry version, too. For this one, I use just a handful of ingredients: steel-cut oats (or old-fashioned if you prefer!), almond milk, and strawberries. You may be wondering if I seriously am telling you that I prepared steel-cut oats without cooking them for breakfast. As I made them the first time, I admit I was a wee bit leary. But, they are absolutely delicious! They still retain their chewiness and remind me a great deal of muesli cereal. If that isn’t for you, you can always substitute old-fashioned oats for the steel-cut in this recipe or try my tried and true method for cooking slow cooker steel cut oats. So, now that we’ve gotten that little bit out of the way, let’s talk about the rest of the ingredients. I use almond milk in the recipe, but again, you can use your choice of milk – whole milk, skim, coconut, rice, cashew – you name it. Whichever is your favorite. You can also use water if you prefer. I just love the flavor of almond milk with the oats and the strawberries. Yum! Next, I use fresh strawberries that I’ve halved. To bring out the sweetness of the strawberries, you can always heat them in a skillet with a tablespoon or so of water. This will not only bring out their sweetness, but will also produce a great juice to add to your oats as well and giving you even more strawberry flavor! Here’s my Strawberry Overnight Oats Recipe.
