on Apr 24, 2014, Updated Sep 15, 2021 17 Comments These sweet potato chips may be a little too easy. Seriously. Fresh, delicious sweet potato chips in less than five minutes? It makes it just a little too easy to feed my craving! But, thankfully, I don’t feel guilty serving them to my family since there are only a few simple ingredients in these sweet potato chips – sweet potatoes, olive or grapeseed oil and a sprinkle of sea salt. That’s it! I use my mandoline to get thin, consistent slices of sweet potato. Of course you can use your knife as well. Then, I shake the sweet potato slices in a zip top bag with a bit of olive or grape seed oil before I pop them into the microwave for a few minutes to crisp up. Once they’ve lightly browned, I add a pinch of sea salt and voila! Done! I’ll just tell you though, you will find yourself making these fairly often after you make them the first time!
